I love to take sweet carrots from the garden and turn them into sour little snacks! Fermenting carrots is so easy and delicious. I’m going to show you how.
Here’s What You’ll Need:
Half Gallon glass jar
1lb of carrots sliced
6 garlic cloves smashed
5 sprigs of fresh dill
2 small pieces of ginger chopped
1 tbsp sea salt
1 quart water
* optional 2 green onion chopped
* optional 1/4 cup of fermenting liquid from another ferment (to help get the ferment started quicker)
Directions:
1. Place half the ginger, garlic, and dill into your clean glass jar. 2. Add half the carrots then the rest of the garlic, ginger, and dill. Then the other half of the carrots.
3. In a separate container mix together the water and salt until dissolved. Add your fermenting liquid if doing so. 4. Pour your water mix over the carrot mixture until completely covered with water. 5. Place a fermenting weight on top to keep contents below the liquid while fermenting. Place a lid lossy on top of your jar to allow gasses to escape. 6. Set at room temperature for 5 days and then check for sourness level. If more sourness is desired at this time then let it ferment for a few days longer and taste again until desired level is reached and then place into the refrigerator for long term storage.
7 You will need to check the ferment everyday to make sure all of your contents are staying below the brine Make sure there is no mold growing. Check for rotten smells. A “sour” smell is normal but it shouldn’t smell rotten. This shouldn’t happen as long as your contents stay submerged. Happy Fermenting!
